With the crisp and chilly air in the mornings, sun-kissed afternoons and cool evenings, it’s easy to see that fall is in full swing.
While many choose to welcome fall by swapping out their summer attire of tanks, shorts and flip-flops for cozy sweaters, plaid scarves and boots, my favorite way to celebrate fall is through baking.
Though many find gluten-free and dairy-free baking to be a daunting endeavor, fear not. These Apple Spice Crumb Muffins are warm, comforting and easy to whip up for a fall dessert.
Plus, who doesn’t love a good muffin?
Something about their apple-cinnamon goodness, soft, crumbly texture and perfect size make them hard to resist. Best of all? No one will even know that they’re gluten-free, whether they follow a gluten-free diet or not.
Ingredients
For the Muffin:
- 1 cup of gluten-free oat flour
- 3/4 cup light buckwheat flour
- 1/2 cup almond meal
- 1/4 cup brown sugar
- 2 teaspoons cinnamon
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 2 teaspoons pure vanilla extract
- 1/4 cup unrefined coconut oil, melt- ed and slightly cooled.
- 2 medium apples
For the Crumb Topping:
- 1/3 cup gluten-free rolled oats
- 3 tablespoons brown sugar
- 3 tablespoons gluten-free oat flour
- 1/2 teaspoon cinnamon
- Pinch of salt
- 3 tablespoons unrefined coconut oil, softened
- 1 medium apple
Directions
For the Crumb Topping:
- Place oats, sugar, flour, cinnamon, ginger and salt in a bowl and mix. Stir in coconut oil and mix until fully combined.
- The topping should hold together and feel moist. If it’s dry/crumbly, add a bit more coconut oil.
- Set aside and wait to dice your apple so it does not brown.
- Preheat your oven to 350* F and line a muffin tin with liners.
For the Muffins:
- In a large bowl stir the oat flour, buckwheat flour, almond meal, brown sugar, cinnamon, baking powder and salt until combined.
- In another bowl whisk the eggs, apple cider, almond milk, vanilla until fully combined.
- Peel and grate the 1 apple until you have 1 cup. (Peel + grate another apple if needed.)
- Pour coconut oil into the wet mixture and then pour into the dry.
- Stir until combined.
- Fold in grated apple.
- Peel 1 more apple and dice until you have 3/4 cup.
- Pour the batter into liners, sprinkle with crumb topping, and evenly top with the diced apple.
- Place in your oven and bake for 30-35 minutes or until golden brown (a toothpick should come out nearly clean.)
- Enjoy.
