People look forward to Thanksgiving dinner the entire year. When the time comes to make the actual meal, we buy the biggest bird, make a million side dishes and spend the entire day preparing the food. Thanksgiving dinner itself is the main event of the holiday.
What is the best part of the meal though? LEFTOVERS. With any other Thursday night dinner, it would be a bummer to get stuck with leftovers for lunch the next day, but not when they consist of tender turkey, cranberry sauce, dressing and whatever other family favorites come from the Thanksgiving menu.
Coming up with ideas for those leftovers can get a little bit tricky, so here are a few recipes that will not leave any stomach empty. Preheat the oven and throw on an apron because these four meals are guaranteed to be easy, fast and delicious. Bon appetite!
Turkey Ring
This dish is seriously amazing. All it requires is one can of Pace picante, two cans of croissant rolls, shredded cheddar cheese and turkey of course. Shred one pound of turkey and mix it with the can of picante. Fan the croissant rolls (unrolled) around a pie tin, hanging part of each roll over the edge. Fill the dish with the meat mixture and sprinkle with the cheddar cheese. Then, take the edges of the hanging rolls and fold them on top of the meat, toward the center. Bake according to croissant roll package.
Turkey Enchiladas
Enchiladas are delicious whether you make them with pork, chicken, beef, just cheese or even turkey! And they are one of the easiest things to make. Use your favorite recipe or just pick up a can of enchilada sauce from the grocery store and follow the instructions on that. Replace whatever meat you usually use with shredded turkey and enjoy!
Turkey Pot Pie
Cube the leftover turkey and mix with a bag of frozen veggies and a can of cream of chicken soup, then pour into a pie plate. Cover the pie filling with a mixture of half a cup of milk, one egg and a cup of Bisquick. Bake at 400 degrees for 30 minutes.
The Monte Cristo
You can make the usual leftover turkey sandwich that has some combination of turkey and cranberry sauce, or try something new and create the masterpiece of a sandwich, the Monte Cristo. Take white bread and spread it with mayo and mustard. Then pile it with Swiss cheese, ham (also maybe a leftover?) and of course, some leftover turkey. Mix together half a cup of milk and one egg, and then dip the sandwich in it. Brown the sandwich in a skillet on both sides and serve hot.
